Sweet [Potato] Casserole... Good times never tasted so good!

I made my first ever sweet potato casserole this holiday season and owe a HUGE thanks to Chef in Training for the sweet recipe below (because I really had no idea where to begin!)

INGREDIENTS

  • 3 cups cooked and mashed sweet potatoes
  • 2/3 cup sugar
  • 1/2 cup butter, softened 
  • 2 eggs, lightly beaten 
  • 1 teaspoon vanilla 
  • 1/3 cup milk

TOPPING

  • 1/3 cup butter, melted
  • 1 cup brown sugar
  • 1/2 cup flour 
  • 1 cup chopped pecans
     

DIRECTIONS

  1. Boil and mash sweet potatoes
  2. Toss in remaining ingredients and mix until smooth and creamy
  3. Put in 9x13 greased pan 
  4. In a separate bowl, combine topping ingredients together
  5. Crumble topping over sweet potatoes
  6. Bake at 350 for 30 minutes
  7. Enjoy!
